Placement matters most
Level surface, at least 10 feet from the house, railings, and out from under any overhang. Never grill in a garage or on a covered porch.
Before you light
Clean the grates (grease causes flare-ups), and for gas, brush soapy water on the hose to check for leaks — bubbles mean a leak. Open the lid before lighting.
Keep the right tools close
Long tools, an instant-read thermometer, and a fire extinguisher or baking soda (for grease fires — never water) within arm’s reach.

When you’re done
Let charcoal cool for hours before disposing of ashes in a metal container. Shut gas off at the tank.
